The pumpkins used are grown in the fields of Yamanaka, a contract farmer in Matsusaka. Allowing them to rest for a while after harvesting enhances their sweetness, making them a perfect match for the cream sauce. The mushrooms used are mainly shiitake and maitake mushrooms from Iga, carefully selected to achieve a balance of aroma and texture.
The special white sauce is handmade using only butter and milk. It has a light texture that brings out the sweetness of the vegetables without being heavy. The cheese is then toasted until golden brown, filling the restaurant with a fragrant aroma.
